About the Coffee:
With the aim of uplifting and providing resources for their communities, Peñas Blancas Central Washing Station is a project launched by two young producers Néstor Lasso and Jhoan Vergara.
When cherries arrive at Peñas Blancas, each lot goes through a series of protocols to preserve coffee clarity and sensory qualities: flotation, controlled fermentation, washing, and slow and even drying.
The Peñas Blancas Community provides small-scale producers with access to infrastructure, technical knowledge and processing resources that creates a collaborative model that positively impacts the local economic stability, fairer market relationships, and a path for younger generations.
