Todos Santos, Guatemala


This new offering is named for the small town of Todos Santos Cuchumatan it comes from.  Red Bourbon and Red Catuai varietals grow at an elevation of 1700masl in the region of Huehuetenango.

Most of the Todos Santos producers are indigenous Mayans who speak the MAM dialect and live by the Tzolkin Mayan calendar.

Uniquely, they also process their own coffees before selling, which leads to greater diversity in flavor profiles than other Guatemalan offerings.

Jorge de Leon works with ~40 producers to create his “Sangre de Toro” coffee, in which growers learn improvements in the fermentation and drying processes.  The goal is to ultimately gain recognition for quality on national and international levels.
